L’Aquila’s delicious and versatile products are created from carefully selected fresh Mediterranean produce and our Ingredient Spotlight serves to highlight our favourite seasonal vegetables and their diverse usages.
 
 
After a year filled with uncertainty, we are beginning the first Ingredient Spotlight of 2021 with the reliable onion. Onions have become the delicious backbone of cooking across cuisines and cultures, varying in shape and colour, each time with wispy skin concealing layers of crunchy texture which becomes soft and sweet when cooked. Marrying effortlessly with almost any ingredient, we believe onions boast an unparalleled diversity.
Our range comprises of show-stopping onion products that can take centre stage in any dish. These include Borettane Onions in Balsamic Vinegar, Sweet and Sour Sliced Onions, Balsamic Onion Pearls, and Caramelised Onion Relish. Sorriso™ Borettane Onions, in particular, are one of our favourites. Slightly smaller and flatter than typical white onions, they become tender and rich once steeped in quality Balsamic Vinegar of Modena. While the standard product is whole, we can also offer them sliced to your specifications. Whether on their own or as a headline ingredient in premium recipes, these onions are sure to impress.
Sorriso™ Borettane Onions are one of our favourite products here at L’Aquila. These gems are slightly smaller and flatter than typical white onions, becoming tender and rich once steeped in quality Balsamic Vinegar of Modena. The standard product is whole, however we can also offer these sliced to specification. We often eat these onions on their own, however they are an ideal headline ingredient for premium recipes:

A simple pairing with flaky, buttery pastry gives exceptional results and an invaluable addition to savoury bakery offerings.
 
 
Our vibrant Sorriso™ Sweet and Sour Sliced Onions are known for their striking flavour and colour. Tangy red onions are sliced and prepared in red wine and vinegar, providing a unique and elevated punch to any dish. This product makes a beautiful topping for sandwiches, pizzas, and salads, but why not go for an equally distinctive application:

Similar to our Borettane Onions, the Sorriso™ Balsamic Onion Pearls are deliciously marinated in quality Balsamic Vinegar of Modena, however can be prepared plain or with alternative marinades. Although only 10-14mm in diameter, these crunchy, milky white pearls are not to be under-estimated in flavour. When added to classic dishes, this product provides an assertive boost:
