When Tom Kerridge Cooks Italy broadcast on ITV1 on 30 July, viewers were treated to a fascinating glimpse into one of Italy's most treasured culinary traditions: truffle hunting in the hills of Umbria.

A Day in the Woods with Alessandro
Truffle hunting is far more than simply searching for an ingredient. It is a centuries-old tradition passed down through generations, requiring patience, experience and a unique partnership between hunter and dog.
During filming, Tom accompanied Alessandro through a beautiful Umbrian forest whilst the dogs expertly followed the scent of hidden truffles beneath the forest floor. Like many visitors experiencing truffle hunting for the first time, Tom was fascinated by the skill involved and the thrill of discovering a truffle in its natural environment.
