There is a lot to say about artichokes, from their beautiful appearance, colour, texture, and history to their unique flavour. Belonging to the Asteraceae family, the artichoke is a perennial herbaceous plant native to the Mediterranean region, mainly cultivated in Italy, Spain, and Egypt.
The globe artichoke is often underrated. Its true beauty lies beneath pastel hues of fresh green and pretty purple – in the fleshy and tasty ‘heart’ of the plant. Whether whole, halved, quartered, or sliced after peeling back layers of tough leaves, the real magic happens when it is roasted or char-grilled until succulent.
