We love September and the mushroom season it brings, making the most of it until the end. However, when it comes to dried mushrooms, there is no such season. Thanks to the drying process, they become timeless ingredients that we can use all year round, making them a perfect ingredient for a variety of dishes.
Prepared in Italy, our mushroom ingredients receive all the attention they need, carefully preserved for optimal quality are ideal for adding a rich, umami taste to many traditional and trendy dishes.
L'AQUILA Dried Mushrooms
Dried mushrooms have an intense earthy smell and rich umami flavour, and they are very versatile and easy to use. Slices or pieces, after soaking in warm water for 20 minutes are ready to be cooked. They are ideal in pasta, sauces, risottos, soups, crepes, stews, pies, stuffings, fillings, etc. Additionally, the water released from the soaking to rehydrate the dried mushrooms, once strained, can also be used as a mushroom stock for a more intense flavour.
Besides our dried mushroom slices or pieces, we also have mushroom powders which can be added to soups, vegetable or meat roasts, stews, gravies sauces, meat preparations, etc.
Unlike slices and pieces, the powder doesn’t need to be pre-soaked and can be added directly in the pot.
